Named after Chef Jordan Domingo's late grandfather, Slao was born from a bold provocation: how far can the boundaries of a style of food that hasn't changed in decades be pushed?
Applying molecular gastronomy and classic French technique to the flavors of the American steakhouse, Slao reimagines everything you think you know. Bone marrow ice cream alongside tartare. A salmon prepared like a New York strip — poached in beef fat, served with a champagne sabayon. A ribeye deconstructed muscle by muscle, each given its own preparation. A dessert that literally produces edible coffee bubbles at your table.
This is not a restaurant. It is a hyper-intimate gastronomical experience — a curated tasting journey presented in exclusive settings across Southern California.
